Spicy Chicken Pho

You will need for 2:

- Drizzle of sesame oil 

- Knob of grated ginger

- 2 crushed garlic cloves

- 1 bashed stick of lemongrass

- Chilli flakes, tsp for cooking plus extra to garnish

- Handful of finely sliced spring onion

- 500ml good quality chicken stock

- Shredded leftover roast chicken

- 275g rice noodles

- 2 handfuls of mangetout

- 2 handfuls of bean sprouts 

- Soy sauce, to add flavour and on the table 

- Coriander, chilli flakes, lime and spring onion to garnish

 METHOD 

1. Add the sesame oil to a large saucepan and place over a medium heat. Gently fry the garlic, ginger, lemon grass, chilli flakes and spring onion.

2. Add the chicken stock and soy sauce, stir it all together. Bring it to a boil and then leave to simmer for 15 minutes.

3. Next add the mangetout, rice noodles and roast chicken. After a couple of minutes stir through the beansprouts and while piping hot distribute between two bowls.

4. Garnish and serve immediately!
